I also think this would make an amazing omelette. First, dice the bacon and render the fat in a skillet. Then, add the pickles for a moderate fry. Add in the beaten eggs (for that nice, fully mixed omelette. Lastly, put in some cottage cheese, just before folding over and removing from the pan.
