A little piece of home just arrived in LA.
Updated (1/29 @ 8:42am): I have had a request for this recipe, so here we go:
Preheat oven to 325 degrees
1 3/4 cup Almond Meal, packed firmly
1/2 cup honey
1/2 cup butter, melted
1/2 teaspoon salt
1 cup dark chocolate chips (or chunks), no darker than 75% cacao
Mix together melted butter, almond meal, salt and honey. Let cool. Fold in chocolate chips and stir until well distributed. Scoop balls of dough at desired cookie size onto sheet and press flat with a spoon. Cookies will only marginally spread out and flatten while baking. Place in over for 18 to 22 minutes or until tops are golden brown. Remove and let cool.
Spinach, Artichoke and Caramelized Onion Quiche on Sweet Potato Crust.
Flavors were definitely on, but the crust was modestly undercooked. I pre-baked it on its own for 20 minutes at 350. Probably needed to be at 400 degrees. After pouring in the custard, it clearly was a little bit soft and didn’t really continue to bake with the rest of the quiche.
I used skim milk rather than whole or heavy cream for the custard and it was still plenty rich. I think they key was going with three eggs and two egg yolks, rather than 4 eggs.
Still excellent cold the next day.
Had some friends over last night. Was planning to grill, but thunderstorms kept us in the kitchen. Used the ground turkey to make some Baked Stuffed Bell Peppers. Surprisingly filling and tasty. I think next time I will coat the top with salsa before baking to add a little extra moisture, but they were still tasty.
Grilled Cajan Shrimp with a Farro Salad. Salad is tossed with a homemade lemon citrus vinaigrette.
Shrimp are tossed in a homemade Cajan sauce. Saved a little extra to drizzle over the pile of shrimp right off the grill.
Grilled bone-in pork chops with home made apple sauce and deviled eggs. Cooked up the apples on the grill before blending into a sauce.
First time ever making deviled eggs. Went with my own recipe. Cholula!
Seared Tuna Steaks, Grilled Corn on the Cob and Summer Quinoa Salad.
Quinoa Salad made with Red Quinoa, Red Onions, Edamame, Sweet Peppers and a Citrus Vinaigrette.
I’m baaaaaaaaaaaack…sort of.
Finally got enough of the deck done that we could set the grill back up. First firing up since early 2010. Worked like a charm (always worth it to pay extra for Weber).
Tonight’s meal: Turkey Burgers with Homemade Raspberry Chutney and Grilled Sweet Corn with Agave Sweetened Butter.
